This is my German grandmother's authentic potato salad recipe, and it's still made every Easter in my family. I inhale stuff with bacon & onions.
4-5 lbs Potatoes, peeled, halved lenthwise, then sliced.
1/3 lb. Bacon
1 C. Sugar
1/2 C. Vinegar
1 medium Onion, diced
3 cups water (approx)
Corn Starch for thickening
**Cook sliced potatoes, careful not to overcook to mush. Meanwhile, dice and fry bacon, not too crisp. Save 2-3 tablespoons bacon grease in pan, discarding the rest. Add diced onion to fry pan, cook until tender. Add water, sugar, vinegar to pan. Thicken slightly with small amounts of cornstarch, but leave pretty runny (about the consistency of heavy cream). Pour over your drained potatoes in a bowl & gently fold to coat. Salt and pepper to taste.
