Feather-light Overnight Rolls

Feather-light Overnight Rolls
1 Cup Water
1 Cup Butter
¾ Cup Sugar
2 Teaspoons Salt
1 Cup Cold Water
2 .25 ounce packages of yeast
½ Cup Warm Water
4 Eggs, Beaten
7 ½ Cups flour
Butter for spreading on dough
  1. In a 6-quart pan bring the 1 cup water to a boil.
  2. Add the 1 cup butter, sugar and salt.
  3. Remove from heat.
  4. Add the 1 cup cold water.
  5. Dissolve yeast in the ½ cup warm water.
  6. When first mixture is luke-warm, add yeast mixture and beaten eggs.
  7. Stir briefly
  8. Add flour and stir together.
  9. Cover pan with lid and refrigerate overnight.
  10. When ready to roll out, divide dough into thirds.
  11. Lightly flour surface of bread board.
  12. Roll each third out in a large circle about ½ inch thick.
  13. Spread dough lightly with butter.
  14. Cut dough into wedges and roll each up, beginning at the wide end, to form a crescent shape.
  15. Place on 3 greased baking sheets (about 12 rolls per sheet)
  16. Let rise about 4 hours.
  17. Bake at 400 for about 12 minutes
  18. Makes 3-4 dozen rolls
