If you didn't have a fantastic meatloaf recipe yet, NOW YOU DO! This was fantastic. Up to par with flavor and moisture you get at the Cheesecake Factory (if you haven't had their meatloaf yet, get it next time!):
1 cup finely chopped onions (about 1 large)
1/4 cup Italian Dressing (can use reduced fat/light)
2 lbs extra lean ground beef (VERY important it's the leanest you can find!)
3/4 cup ketchup, divided
1 package (6 oz) Stove Top stuffing mix for chicken
1 cup water
2 egg whites (can discard yolks)
1/2 cup shredded cheddar (optional, as a topping)
***Preheat oven to 375*. Cook onions IN dressing in large nonstick skillet on medium heat until golden brown (8-10 min). Remove from heat & cool slightly.
Combine meat, 1/4 cup of the ketchup, stuffing mix, water, egg whites and onions & mix well. Place meat mixture in 9x13 baking dish/pan & shape into 10x5 inch oval loaf shape (will be large). Spread with remaining 1/2 cup ketchup.
Bake 55 minutes to 1 hour or until cooked through (160*). Sprinkle with cheese and bake an additional 2 minutes, if desired.
